Banana Bread
Makes one 9" x 5" loaf
2 C All-Purpose Flour
1.5 t Baking Soda
1/2 t Salt
4 large overripe bananas
1 C Sugar
3/4 C (1 1/2 sticks) Unsalted Butter,
melted and cooled
2 Large Eggs
1 t Vanilla Extract
1/2 C Pecans, finely chopped
Preheat oven to 350 degrees.
Lightly grease 9 x 5 loaf pan.
With the back of a fork, lightly
mash two bananas in a small bowl.
In a medium bowl, combine flour,
baking soda, and salt. Give it a good
whisk to combine.
With an electric mixer fitted with
a wire whisk, whip 2 bananas and sugar
together for 2-3 minutes. You want
to cream the bananas and removed all
large pieces.
With the mixer running, stream in
the melted butter. Add the eggs and
vanilla and beat well to combine.
Add the dry ingredients and mix until
just combined.Fold mashed bananas
and nuts with a rubber spatula.
Pour the batter into the prepared
pan and bake for 1 hour until golden
brown and a knife inserted into the
center comes out clean.
Cool bread in the pan for 10 minutes,
then turn out onto a wire rack and
cool completely.
